Easy Bacon Kale Recipe

So for quite a while now you have heard the benefits of the super food Kale, but if you are like me, you looked at this leafy green vegetable and really had no interest in it. So finally I went in search of a recipe that I knew I couldn’t resist and I found one-Kale sauteed with Bacon. Who doesn’t like bacon? I knew my daughter would even try this one! I found this recipe while searching a site PaleoMom that I have become addicted to while researching my autoimmune disease so you will begin seeing many more gluten free recipes that I will modify only because I don’t go full into the autoimmune diets and substitute many things like Ghee, but on to this wonderful Bacon Kale Recipe modified from a recipe originally found on www.thepaleomom.com.

Ingredients:

  • Large bunch of Kale
  • 3 ounces of bacon
  • 1/4-1/2 cup of beef broth
  • 1 TBSP Lemon Juice
  • 1/4 tsp Minced Garlic
  • 1/4 tsp Onion Onion Tastefully Simple Seasoning (I added this because I like onion). You can buy this from the Tastefully Simple website or use fresh onion. (My girlfriend is a representative and I have found many seasonings I use regularly so contact me if you are interested in reaching out to on her website page.)

Cook the bacon on medium heat and move it to another plate to chop it up. If you have too much grease, drain some of it off and just leave it in another container in case you want to use it later.  Just leave about 2-3 TBSP in the pan and if you find you want a bit more you can add it back in, but really 3 TBSP should be the most you will need for this recipe. We want a great tasting recipe, but we want to be healthy at the same time.

Put the chopped bacon back into your pan and add the kale. Now add a little of the beef broth stirring until it evaporates.  Continue adding the broth and stirring until the kale is cooked-usually 3-5 minutes.

Add the garlic, lemon juice, and onion onion seasoning.  Stir and cook 1 more minute. Serve and Enjoy!
