Gluten Free Pork Francese
I happen to be in my local Publix picking up some groceries right at dinner time when I walked by the Aprons cooking station. The smell of Pork Franchese over Pesto Tortellini filled the air. I looked at the ingredients and realized much of it I already had at home and knew I could substitute a few ingredients if I needed to so I began to create a new version of the recipe. Here is what I came up with.
Ingredients:
- 1 lb pork cubes steak
- 1 fresh lemon for juice
- 1/2 small sweet onion
- ¼ cup grated Parmesan cheese or I used gluten free bread crumbs that have Romano cheese already in it. I omitted the Parmesan for my meals.
- ½ jar of 7.5 oz marinated artichoke hearts. (You can use more or less of this, the original recipe called for a full jar, but the first time I made this I thought that was a bit much. The second time I made it, I didn’t use them at all and loved the dish just the same.
- 2 TBSP capers
- 2 eggs slightly beaten
- 2 TBSP butter
- 1 TBSP canola oil
- 1/2 cup of Gluten Free Seasoned Bread Crumbs with Pecorino Romano Cheese
Preheat a large nonstick saute pan on medium heat for approximately 1-2 minutes. Place both butter and oil in a pan to melt. Dip a pork cutlet into the egg, one piece at a time allowing excess egg to drain off and then dip your piece into a dish of gluten free bread crumbs, coating both sides of pork cutlet. Cook 2-3 minutes on each side or until golden brown. Allow these to drain on paper towels. Repeat with remaining pork.
Add onion and artichokes to saute pan, cook and stir for 2 minutes. Next stir in the lemon juice and capers cooking approximately 1-2 minutes for the lemon to reduce by half and the onion is tender.
Combine pork and sauce mixture. Sprinkle with Parmesan cheese if you prefer and serve.
One piece of pork I did not place in sauce and my picky eater loved it, but just looking at my creation with the artichokes I wasn’t getting any takers.
