Finally I found the way to make easy, juicy chicken breasts in just over 20 minutes. I found this recipe on www.thekitchn.com and modified it a bit to my taste, but here is what I did to get perfect juicy chicken breasts. Now this requires trust, but you can do it too. Just trust me.
Ingredients
- Chicken breasts
- Olive oil Just a bit to drizzle in the pan
- Salt and pepper to taste
- Lemon pepper seasoning to taste if you desire
Salt and pepper both sides of the chicken breasts, add lemon pepper seasoning if you would like. Heat the olive oil in your pan and brown both sides of the chicken breasts just enough to brown them nicely. Usually one minute each side.
Then turn the heat down on your skillet and cover the chicken with a tight lid. Leave the chicken cooking for 10 minutes-no peeking. After 10 minutes, turn off the heat but leave the chicken alone-no peeking.
After your time is up open up the lid and watch the steam disappear. You will be left with moist juicy chicken like you have never had before.
