Are you looking for a meal or even a snack you can make in minutes? Well here is my go to when my daughter is starving and wants something to eat with substance.

Ingredients

  1. 2 flour tortillas regular or gluten free if you need gluten free
  2. Mozzarella cheese
  3. Pam Butter cooking spray

I take two tortillas,  I spray Pam butter cooking spray on one side of each of the flour tortillas. I spray one, put it in a hot pan and top it with Mozzarella cheese. Then I lay the other tortilla on top and spray that one on the side facing you. While it is cooking- basically just melting the cheese, I am pressing down on the top tortilla to make the cheese adhere to the tortillas. Then when the cheese is melted usually only a minute, I flip the entire quesadilla over and brown the other side again taking on a minute or two.

To make this even more of a meal you can add rotisserie chicken to the cheese and have a full hearty meal.

My daughter loves this and when I am running short on time with a starving child, this is the best thing I have found so far.
